Our wines are made in the Old World style. They are food friendly because they are lower in alcohol with less use of oak and higher in acidity to cut fats and creams in food. Our limestone soil provides minerality and the cool climate allows for more complex wines.
Being in Prince Edward County, we do Chardonnay and Pinot Noir in the Burgondy style, however, we focus on Burgundian varietals such as Malbec, Merlot, Bourdeau blends and the first County port, Van Alstine, made from estate grown Frontinac Noir.
We use an artisanal approach to the wine making. Everything is hand picked, wild fermented and unfiltered. We hang our fruit longer, use long cold maseration soaks for fuller bodied wines. Our blends are made as single varietals and blended for balance. We finish with hand labeling bottles.
