Being dry, this wine is perfect for fine dining. It’s very much in the style of the dry Rieslings from Alsace, and referred to as “Trocken” or “dry” in the German classification. The wine is a pale straw colour with no tannins and appetising high acidity. This wine is best served at 3C to 7C.

Winemaker’s Notes

This wine comes from Niagara giving the grapes a bit more fruit and less acidity than a County Riesling. The grapes were harvested in late October, pressed and inoculated with select yeast in a stainless steel tank. The wine fermented over the course of two weeks, at a slower pace for best development of aromatic complexity. It was then racked off lees, gently filtered and hand bottled.

Tasting Notes

White grapefruit and a blanket of fresh flowers, green tea, lemons and ripe apples greet the nose.The primary flavours are citrus and stone fruit flavours, ripe golden delicious apples, lime and a touch of jasmine. It is an aromatic, light-bodied, dry wine, which has a soft mouth-feel while still having appetizing acidity. It is balanced and fresh with a delicate palate and elements of lilac and flint.

Pairing Notes

This elegant wine pairs with spicy foods or anything with a bit of creaminess. Macadamia nuts, dried fruit, squash, artichoke, coconut, eggplant and spicy curries make perfect pairings. Vietnamese cuisine, spiced Arabic or Indian foods and saffron rice dishes pair well. This wine can hold its own when paired with rich, oily dishes like onion rings, spicy spring rolls, heart of palm cakes, pan-fried white mushrooms, spicy falafel, green curry, peanut sauce, honeydew melon salad or a Chinese salad with sesame ginger dressing.
