Winemaker’s Notes

A perfect growing season resulted in thicker skins for more extraction of colour making for a dark, concentrated vintage. Both the Cabernet Franc and Merlot are complimentary grapes. The fruit was hand harvested then crushed and destemmed into a 1-tonne bin and allowed to cold settle for two days. Over the next four days, the fruit was fermented with three daily punch downs for maximum extraction of flavour and colour. The wine was then pressed off, gently racked and barreled down into older French oak barrels where it aged for 20 months. It was then racked out of barrel, and coarsely filtered to remove heavy sediment then hand bottled. This is therefore considered an unflitered wine.

Tasting Notes

The nose presents florals with cedar and eucalyptus followed by a warm mouth feel with appetizing structure and a refreshing note of acidity. Gemini presents charred red cherry, cocoa, raspberries and vanilla followed by dried cranberry, pomegranate, and black prunes. Oak aging creates smoke, earthy patchouli and sandalwood. Silky tanins and grippy structure adds complexity.

Pairing Notes

This medium-bodied, food wine stands up to tomatoes, vinegar-based sauces and real herbs such as oregano, thyme, rosemary, jalapeño, coriander, and pepper. Pair it with black legumes, roasted vegetables, mushroom, eggplant, artichokes, curries and greens. Anything oily or BBQed.
