Indicative of Ontario, this pinot has classic cherry but also strawberries - with a pretty violet nose. Called “The Heart Break Grape” because it’s so hard to fully ripen before it starts to break down, Pinot Noir is what our cool climate does best here in Prince Edward County. Our terroir allows the Pinot Noir to ripen during the day but then it’s “put in the fridge” at night with the cool temperatures which helps to keep the grapes stable as they ripen. We call this pinot the “Southern Belle,” because it’s delicate, elegant, a little temperamental and a truly exquisite wine.

Winemaker’s Notes

PIcked in perfect harvest conditions, these grapes were fermented in small bins. The cap was punched down by hand 3-4 times daily. After 25 days, the wine was pressed off the skins and allowed to settle in tank before being racked into barrels for further ageing. It spent 17 months in 3rd and 4th fill French oak barrels, so the oaking is light and subtle. Afterwards, this wine was lightly filtered before going through gentle gravity-fed bottling.

Tasting Notes

A lighter bodied and coloured Pinot Noir, this wine’s focus is on fresh red fruit. An incredibly vibrant nose with aromas of cherry, red currant and raspberry pie, a hint of wood spice, vanilla and green menthol. There is also a pretty note of fresh tea leaves on the nose and palate. The palate has a lot going on - bright red fruit dominates but there is a slight earthy-ness, red beet and mushroom with red citrus and a remarkably long and layered finish.

Pairing Notes

White mushroom bulgur risotto, guacamole, squash or yellow split pea soup, pine nuts, bruschetta with black olives, fresh herbs on white potato leek pizza, fruit-based sauces and polenta.
